Our rum is made from the fresh-pressed juice of Java varietal sugarcane, fermented with ambient yeast in wood fermenters and double-distilled by hand by maestro distillers in copper alembic pots.

Villa Alta Rum is made Agricole-style from 100% estate-grown Java-varietal sugarcane in San Cristobal Lachirioag, Oaxaca. As such, it is a terroir-driven spirit that is a living and constantly evolving thing that will change from harvest to harvest, batch to batch, while remaining incredibly high quality throughout.
Each bottle is the work of an individual family producer and carries a very specific sense of place, or “gusto historico”, that comes from this regionally-specific product.

Villa Alta Rum follows a barrel-aging process that is virtually unmatched in Mexican spirits, employing different distillation proofs, barrel finishes, storage locations, aging times and more to produce different final flavors, so we can constantly offer unique releases.
Each bottle is either from a single barrel or is from a blend of a very small selection of barrels that were carefully chosen and blended by our team. Every sip offers the chance to surprise and delight by being entirely new and different than anything the drinker has experienced before.
